Sausage & Peppers in Red Wine Sauce

Sausage and peppers are an important part of Italian holiday family buffets. From
among the lasagna, pasta, and porchetta, everyone always gravitated to this
traditional dish. An afternoon of abundansa would not be complete without sausage and peppers eaten with a hearty Italian roll. This is easy to make and it can sit in a
crock pot for hours and still taste great.

Ingredients

4 lbs. Italian sweet & hot sausage combined. Hot Italian turkey sausage is great for this.
¼ cup minced garlic
2 tablespoons fresh chopped sweet basil
2 medium onions chopped
8-10 red and green Bell Peppers, seeded and loosely chopped
¼ teaspoon black pepper
2 tablespoons of olive oil
½ cup of semi-sweet red table wine.
1 large can of diced tomatoes
1 large can crushed tomatoes

In a large frying pan, fry sausage on medium high heat until well done. Drain grease
when completed. Too much grease will overwhelm the rest of the ingredients.

Cut up cooked sausage into 1-2 inch pieces. In a large sauce pan, add the olive oil
and cook the onions until they are slightly translucent. Then add the sausage, bell
peppers, garlic, basil, fresh ground pepper, wine, diced tomatoes, and crushed
tomatoes. Simmer to start on medium heat, and reduce to low heat after 10 to 15
minutes. Cooking slowly allows the flavors to blend. Taste the flavoring before you
finish the recipe. You will develop your own seasoning tastes. The sausage is already aggressively seasoned, so I suggest that you do not add any salt. When the peppers are soft, it is ready to serve.

Transfer the mixture to a crock pot set on low to serve buffet style. Add 1/2 cup of
water to keep it hydrated if the mixture becomes too dry. A hearty Italian role is a
great complement for this traditional Italian dish. If desired, warm rolls slightly in
the oven before serving.
