Breakfast Crepes
Crepes can be used for many of the meals we make. That also includes breakfast. I could easily plan an entire day’s menu centered around crepes. By the end of the day, I would have eaten well balanced, delicious, and satisfying meals. The possibilities for Breakfast Crepes would even stretch my imagination for giving new slants for traditional meals.
Ingredients that are cooked for breakfast can be combined with a crepe. This is just another way that families used whatever ingredients were leftover from previous meals or were available that morning. The recipes listed here are only five of the various Breakfast Crepes that I have made for my family. Use your imagination, experiment and enjoy the gift of crepes for your family table.
Egg and Cheese Crepes
Scramble eggs with shredded cheddar or mozzarella cheese. Spread the mixture on the crepes, roll them up and place on a cookie tray in your oven. Top with salsa or any cheese sauce.
Sausage, Onions and Mushrooms Crepes
Precook Italian sausage with chopped onions and mushrooms in a skillet. Drain off the fat and spread the mixture on the crepe. You can also add chopped red bell peppers to the sausage mix. These can be topped with cheese sauce or sausage gravy made from a mixture of flour and butter.
Crepe Breakfast Burrito
Every ingredient that goes into a Breakfast burrito can go into a crepe. With typical base ingredients such as eggs, onions, peppers, add sour cream and salsa inside and as a topping.
Cheese Crepes
Start with a little ricotta cheese, shredded cheese of your choice and a good grated cheese. These finish as a melted gooey comfort breakfast food. Top with some grated cheese and you have instant comfort.
Blueberry Crepes
The possibilities are endless. Instead of filling yourself with thick pancakes, make some blueberry flavored crepes for breakfast and top with blueberry pie filling, or reduced and sweetened fresh blueberries. Whipped blueberry cream cheese makes an excellent filling.
