Bread Sticks

1 package active dry yeast
3 cups white flour
1 tbsp. sugar
1 cup warm water (110 to 115°F) divided
1/4 cup olive oil
1 tsp. sea salt
Toppings
¼ cup melted butter
Kosher salt
Grated Parmesan cheese
Sesame seeds
In a large bowl, dissolve yeast in ¼ cup of warm water (110-115º) and stir lightly until mixture bubbles. Add olive oil, salt, sugar, and gently stir.
Gradually hand mix in the flour. Add more warm water if the dough is too dry. Now you may set the dough on a floured surface and knead for about 5 minutes or until the dough no longer sticks to your hands. Place in an oiled clean glass bowl, cover with a dish towel and place in a warm area. Let rise to about double its size. Then punch down to about ¼ of its size, but be gentle when handling dough. Divide the dough into walnut sized or around 12 to 15 pieces. Cover again and let rise again for at least 15 minutes.
Dust your hands with flour and roll each dough ball into 12” ropes. Place them in a greased baking sheet about 2” apart. Brush with melted butter and lightly sprinkle with either course kosher salt and/or sesame seeds.
Bake in a 350º degrees for 10-15 minutes. Bake only until they are golden brown. As soon as they are removed from the oven, sprinkle them with grated Parmesan cheese. You can also have a bowl of a good warm pizza sauce for dipping.
